Chia pudding is one of my favorites! Chia seeds are packed with magnesium, omega 3 fatty acids, and antioxidants, and this is such a simple breakfast to make ahead and grab. I love topping it off with blueberries.
Prep Time: 5-10 minutes
2 cups – coconut or almond milk
2/3 cup – chia seeds (I get mine here from Amazon because they are so much cheaper!)
1/2 tsp – vanilla extract
1/4 cup – sliced almonds
1 cup – fresh fruit to top it off (such as blueberries or sliced strawberries or peaches)
- Add the milk, chia seeds and vanilla to a 1 Qt mason jar with a tight-fitting lid.
- Seal tightly with the lid and shake to combine the ingredients.
- Chill in the refrigerator overnight.
- After the seeds have swollen and formed a consistency of pudding, spoon out a serving and top with the almonds and your favorite fresh fruit.
